Barikata Ramen Bar introduces maze soba, tsukumen





Barikata Ramen Bar has introduced its two new ramen products: maze soba and tsukumen.


Bea Evardone, Barikata’s marketing head, in a “ramenology” session with the media, said tsukumen is dipping ramen, while maze soba is the soupless version.

Tsukumen is served in two bowls, one containing the broth and the other the noodles. For flavoring, the dish comes with chashu, tamago and nori. Tsukumen has three different flavors: shiro (the traditional tonkotsu), aka (the spicy tonkotsu) and kuro (tonkotsu with roasted ground garlic and sesame oil).


Meanwhile, maze soba, the soupless ramen, is served at Barikata in a big bowl filled with noodles. It has minced pork, egg yolk, sesame seeds, scallions, onions, bonito flakes, vinegar and sesame oil. It also comes in two different flavors: the kuro maze soba, which is topped with roasted garlic and sesame oil; and aka maze soba, which has an added flavoring of spicy sesame oil.

Evardone said the two new additions to Barikata’s authentic Japanese menu can be traced to the time the Japanese was improving the variants of their ramen dishes. The maze soba, however, was invented and perfected by a Taiwanese chef who was based in Nagoya, Japan.

Apart from these two additions, Barikata still offers their bestsellers like the rice bowl favorites (ebi tendon and gyudon) and other famous Japanese dishes.

Barikata Ramen Bar is located at the ground floor level of Calyx Building at Cebu IT Park in Barangay Lahug, Cebu City.
